I'm half-Jamaican and half Ghanaian. I've been cooking from a young age thanks mainly to my Nan, but the wider family passing on gems too. Then it naturally went from there (please see 'Full Description' below :) ). It's truly an honour to cater for a couple's wedding and we have always passionately, efficiently and 'smoothly' ensured flavorsome, good-looking food is well taken care of. Excited to hear all about you and discussing top tier food.

From Nan to Masterchef to YOUR Wedding ~ We are passionately dedicated to delivering truly memorable food experiences here at Chef Jay - here’s why. My family sparked my initial love for cooking. My Nan in particular ensured I knew how to recreate all of the Jamaican classics from slow-cooked, melt-in-the-mouth Curry Goat, to Escovitch Fish and everything in-between. Over many years, I learned about balancing spice, good technique and cooking with love and confidence. Being half-Ghanaian, I learned the ways we pack maximum flavour into stews, beans, maizes, and swallows across West-African cuisine, creating tasty ways to use as much of a meat or fish as possible. Living in Barcelona and travels to Italy allowed us to indulge in tapas and pasta (for research purposes…). Attending family-style functions with local friends were first-hand experiences of what we ALL love about Spanish & Italian food: traditional, let-the-food-do-its-thing, love-infused cooking. Ragu? Yes please. Authentic Cantonese, Indian, Thai & Vietnamese dishes are scattered throughout my experiences of enjoying, studying and cooking food. Endless variations of rice, egg and wheat noodles, crispy juicy meat, wok-graced seafood, dim sum, and curries. Travels to Thailand further enhanced how we bring these through for our Clients. All of the above, a spontaneous, incredibly fun (and proud) run on Masterchef 2022, endless explorations of restaurants, and travels to Asia and Europe underpin why we do what we do: a promise to deliver an experience, creating flavorsome, thoughtfully presented dishes, ensuring seemless consultation-to-event, showcasing something that truly brings every single corner of the World together - incredible, food. Life’s milestones are important so ensure you have the food to match.

Jay curated a beautiful 3 course meal for my best friends Bridal Shower. This event was especially important to me because not only does the bride-to-be have a very high standard and extremely particular taste, she is also like a sister to me and the very first person in our friendship group to get married. Jay understood that perfectly. Nothing was ever too much for him and was always available for any questions or ideas I wanted to throw his way. His communication was excellent (SEE IMAGE)

Exquisite 3-Course Meal
Chef Jay catered for us. He created and printed classy menus and made an exquisite 3 course meal - prawn starter, lamb main and chocolate fondant for desert. All my guest were blown away with how good the food was. He even brought waiters to serve drinks. Totally amazing! I will definitely use him again.

How would you wow the judges on Masterchef?

Life is so funny. What a question to have as standard here on Bridebook; I am writing this after appearing on the show (which was around when we started) - so, for myself the actual answer here is the panko-crumbed seabass dish that is now one of my dishes for Chef Jay: mainly positive feedback for my first dish after what was a blurrrr of cooking lol. But yes, lovely dish - has been continuously refined as with all of our dishes.

What is the most innovative dish you have created for a wedding?

Innovative...in terms of balancing flavours and styles, which is our 'specialism' - fusion, I'd say a Jerk Chicken Roulade with Rosemary & Garlic Fondant Potatoes, Jerk Chicken Jus, Grilled Spring Greens and Patagonian Scallops. Writing this has made me want to eat this ha.

What is the food of love?

Lobster came to mind instantly - I think it's the luxury, sweet, tastiness of it all. Garlic herb butter drizzle. Chocolate fondant comes to mind also. There's also something about pasta - and on the other end of the spice scale, curries. I see love in alot of food so we will end the list here.

What is your secret ingredient?

Trick question, surely? Only revealed to my couples :)
