THE TRADITIONAL TASTE OF ABRUZZO
The history of Abruzzo cuisine develops among its mountain ranges. Its harsh territory made survival for its population difficult for a long time. However, this hostility has allowed us to jealously preserve the authenticity of its culinary tradition.
Abruzzo is a region rich in tasty and particular dishes, as is its land: sweet and savory dishes, seafood or land specialities. His dishes were strongly influenced by the pastoral culture where cheeses and sheep meat played a fundamental role. At the same time, going down the coast, you can immerse yourself in the landscapes where for centuries the fishermen's families have prepared one of the best fish marinades: the scapece of Vasto.
But there is another ingredient that has contributed to shaping the culinary heritage of Abruzzo: the warmth of its people, from which the tradition of "Panarde" originates. Celebrated today only in folkloristic ceremonies, this custom was practiced by Abruzzo families on solemn occasions in which endless banquets were organised, starting at the stroke of one in the morning and ending at dawn.
