Apostolis Geladaris, head of F&B and Evetns, has been with the Myconian Collection for 11 years and is our man for all seasons when it comes to events. Drawn to F&B and event management through a passion for people and challenges, Geladaris says: ‘The key qualities in this job are flexibility and honesty – I have never sold an idea that couldn’t be realised and never said no to a guest if possible’. He has mentored waiters who today are maitre d’s, passing on his philosophy, patience and extraordinary generosity. ‘I never get bored, I just find a new challenge. Every guest or company presents a new opportunity if you believe in tailoring service to an individual situation. You build trust over the most challenging events – the higher the expectations and delivery, the greater the satisfaction.’ Geladaris, who came over from Elounda Mare as cellar master where he was responsible for over 750 different labels, has a true passion for wine which he can be encouraged to share, if you happen to catch him in a rare quiet moment, taking in the view from Utopia’s Pavilion restaurant.
